Meatball Sandwiches with Baked Penne


  • Leftover Penne in Pink Sauce
  • The rest of the jar of marinara from the same recipe
  • Your favorite store-bought meatballs and rolls
  • 1/4 cup Italian breadcrumbs
  • 1/2 cup shredded Parmesan cheese (Mozzarella would work too)


  1. Spray glass baking dish with non-stick spray
  2. Add left over Penne in Pink Sauce. Top with breadcrumbs and cheese
  3. Cover and heat at 350 until hot and cheese is melted.
  4. Cook meatballs to package instructions. Cover with the rest of the jar of marinara that remained after making the Penne in Pink Sauce. Serve on rolls.
